Hey #asknoster , do you have experience cooking, eating Jerusalem Artichoke? I think there are some at the farthest back part of my property. Likely planted by the previous owner. I know I should wait till after frost to harvest. I read that winter savory herb will help with the gassy properties. Other than that I have no clue. Would love your wisdom.

Maybe @Jack Spirko can point you in the right direction? I know itβs one of the plants he has recommended on The Survival Podcast. You might want to do a search on his website to do a deeper dive.
Theyβre pretty tasty. I always did them with tallow, salt, pepper, and lots of fresh garlic in a Dutch oven until tender. Cook time is probably comparable to something like beets.

Fermenting them also apparently helps cut down on gas.
Iβve eaten them without savory or fermenting and never noticed a problem. Possibly because there were only few of them mixed with other veggies.
I have used them in place of potatoes, so any way you would use potatoes, you can substitute.
Harvest after frost up until spring. Personally id rather eat potatoes. But I do feed them to my rabbits. Harvest them as hard as you can andthey patch will be strong and healthy. Even if you harvest every last one you can find, there will still be tons that sprout up! Very hard to get rid without persistent weeding/pulling
