I haven't ran Umbrel in a couple years. Do they give you a choice or automatically install Core when you choose to add a Bitcoin node. What does MyNode do? What does RaspiBolt do? Thanks!

Yes, start9 changed the one the recommended and are “forcing” everyone to knots. You can still install core. It’s just a few more clicks. And it’s not part of their primary package

Interesting because I was bitching the other day about how not obvious it was to switch from one Bitcoin implementation to another on Start9.
I was switching from Core to the Knots and it was not at all obvious what steps needed to be taken in order to make that happen. A non-charitable interpretation of that could very easily point at favoritism towards Core over Knots at Start9. I have no idea what the leanings are on this matter at Start9 though.
I haven't experienced what you're saying so I can't speak one way or the other on that but my sense of the situation is that Start9 is still reacting to the Core/Knots issue that has grown in attention more and more as Core30.0's release approaches.
Ultimately, I don't have too much to offer on this other than my take based on some recent experiences.

Not true. I just got a server one from start9. Knots isn’t even included in the start9 registry. You have to switch to the community registry to download knots.
I've used StartOS and this is not true. Knots is in the community registry. You need to change registries to even access it. Changing between Knots and Core is a couple of clicks
I run the Sovran_Pros a bit differently. You can request which one you want when I set them up. Right now if the person does not make a note on which they prefer, I set it up with Knots.

i don't mind choosing a side as long as options exist. i view this as an advanced option. most people won't understand the difference anyways, but for those that do, giving them a choice is great.

It looks like that because StartOS sees them as the same app. If it says core in the services tab, you’re running core. It can be confusing but it’s nothing malicious.
Dud chill, it's just a simple UI bug that we have been very loud and transparent about. They share the same ID, so StartOS UI can't tell the difference. The one you installed is the one you have installed

You can pick core or knots. This is 100% FUD. They posted that there are some UI bugs that may look weird, but you can always choose.
