Um wow! It is really tasty freshly mixed. It's in the fridge now. 2/3 c mayo 4 tsp (I used a bit less because mine was pretty spicy) gochujang 2 tsp rice vinegar 1 c kimchi drained and chopped 2 lbs potatoes peeled and cubed 4 oz shredded carrots

Oof, I have been saying for ages I want to make my own. I just haven't been brave enough to give it a go...soon™. I'm so happy the tater salad turned out, I hate cutting up potatoes 😂. I should also note that I put the dregs from my kimchi jar in to the mayo and gochujang to loosen it up a little instead of more vinegar.
