Breaking Bad definitely had a very good ending. Sons of Anarchy had an equally good ending, although some episodes, if not entire seasons, could have been left out

Justified did as well. It was still massively popular with fans but the creators wrapped it when they felt the story arc had been completed.
Have you read the Wool series? It's perfect just 3 books each with an ending. It's also on apple TV as the Silo series.
