Which is more scarce? A wine that takes 3 years to make. A whiskey that takes 15. Wine and whiskey are both low time preference beverages. More time in the barrel should mean more scarcity, but it doesn't. Real scarcity can't be recreated. The first step in winemaking is growing the grapes. That growing season sets the acidity, structure, and character for everything that follows. The winemaker's job is to shepherd those flavors to the bottle without losing what the land gave them. Whiskey doesn't work that way. Distillation erases the growing season entirely, leaving a blank slate. A 15-year whiskey is a craft object. A 2023 Pinot Noir from a high-elevation vineyard in western Colorado is a document of that specific year. You can make another whiskey. You cannot repeat the 2023 growing season. That's why people get mystical about wine. You open a bottle from a specific place, a specific year, and that exact thing will never exist again.

Yeah, no. Whiskey flavour depends not only on the grain, how it was ground and roasted, the yeast used to ferment it, and the temperature it was fermented at, but also the characteristics of the still it was distilled in. Companies expanding production or replacing still-heads go to great lengths to replicated the original, right down to dents from mishandling. Cheap blended whiskeys are replaceable, of course, but so are cheap blended wines. (I had a job in a building that was a former distillery, and I read way too much of the history of the place while standing around waiting for meetings lol)

No that’s small batch. Tell me you can’t tell the difference between single barrel whiskeys with different mash bills and I’d say you haven’t tried enough whiskey.

I’d love to learn otherwise. Yet to find a whisky, and I’ve tried a lot including expensive ones, that don’t taste like gasoline. Love me a whisky mixed drink - just not straight up.
I love peanut butter and whiskey and my wife got me Screwball. Tried one sip and it sat on the shelf for 4 years. Come to find out it’s THE BEST at making screwdrivers or mixed with cran-grape juice. Price is usually expensive as the biggest difference between bourbon and *nearly* everything else is time.
