I think part of it is that they smoke crusty dusty old weed. THC degrades, the fresher the better (after appropriate curing of course).
One of the annoying problems with it becoming widely legalized is these dispensaries don't roll their product so a lot of stuff is old and nasty but newbs don't know any better and then complain.

My bro took me to dispensaries in Cali that had some old ass pre rolls and rolled their eyes at me when I got fussy about harvest dates.
Maybe the dispensary you go to keeps better care of their inventory, I'm not saying good dispensaries don't exist just that people new to weed can easily buy bad weed and not understand why they're not having a good time.
I hope that I will never need yer services as I have representation Canada. And do not plan on getting so much as a speeding ticket in The States.
