Steak n shake doesn't need to be self sovereign. It's a corporation they have billions of dollars. It's owned by Biglari Holdings. As Bitcoin takes over we will see many if these corporations dissolve. Which is good. Americans should be run the businesses not corporations. But it's good they are accepting Bitcoin.

I tested this wallet two years ago. It was a great UX. I spoke with them trying to get them to add Zap support. They said it was on their road map. And then they added shotgun KYC for US customers.
